Dessert
Apple pancakes (racuchy)
Version from episode 14
Ingredients
- 2 eggs
- 1 cup of flour
- 3/4 cup of milk
- 1/2 cup of sugar
- vanilla sugar
- 1 teaspoon of baking powder
- 2 apples
- oil for frying
- icing sugar for dusting
Tips
You can mix with a fork, but a whisk or a mixer is easier. The grater is sharp – mind your fingers when grating the apples! The oil in the pan is hot and may spatter.
Method
- Peel the apples and grate them.
- Crack two eggs into a bowl.
- Add half a packet of vanilla sugar.
- Pour in roughly half of the milk.
- Mix well.
- Add half of the sugar and half of the flour and keep mixing.
- Add the rest of the flour and the whole packet of baking powder.
- Add the grated apple to the batter.
- Mix everything well.
- Heat the oil in a frying pan.
- Pour the batter with a ladle to form pancakes (usually 3 or 4, depending on the size of the pan).
- Fry on each side.
- Once fried, serve with icing sugar and… coffee!
